Originally from the Baltimore/Washington area, Marc Veilleux was introduced to the hospitality industry at the age of 20 working for a small Southern-Italian Family-style restaurant called ‘That’s Amore’ which offered authentically prepared cuisine in an ‘at-home’ atmosphere. During his 6 years with the company, he earned a General Manager position, gained an understanding of how a multi-unit concept profited while expanding operations and developed an appreciation for the industry from both co-workers and guests, especially the gratitude received for providing the back drop for family gatherings and special occasions.

In 2002, Marc teamed with another entrepreneur at an Italian Style Bistro concept called Agrodolce, a 2003 Washingtonian Magazine Top 100 Restaurant. This experience provided evidence of how a single unit operation succeeded by supporting the community, exceeding guests expectations through quality food preparation, presentation and personal service. Agrodolce also provided the opportunity to further understand and enjoy the relationship between wonderfully prepared cuisine and beverage which only enhances the dining experience.

After relocating to the Dallas area in 2006, Marc found himself at Pappas Bros Steakhouse, voted #1 Steakhouse in 2007 by Texas Monthly Magazine, and observed the success of a large corporation that provided the highest food quality and service standards within a four-star, fine dining setting. The Pappas Co. cemented the knowledge that complete guest satisfaction, constant education and thorough staff training pave the way for continued success.

This venture also provided an introduction to co-worker Tommy Nevill, who opened the door to the world of barbeque, including the regional varieties and a journey of shared ideals and possibilities began. With a well developed plan to observe, study, create and understand the culture and nuances of barbeque, not only from the Texas region, but Kansas City, Memphis, the Carolina’s and beyond, we strive to bring the best of the best from these styles to one roof and provide a unique dining experience and ambiance to our guests.
